- 3 red beets, peeled and sliced
- 3 turnips, peeled, if desired, and cut into cubes
- 3 carrots peeled, cut into 1-inch chunks
- 4 sunchokes, cut into cubes
- 4 Tbsp olive oil
- 2 Tbsp fresh thyme
- 1 tsp salt
- 1/4 tsp freshly ground pepper
Align SolSource with the sun and heat olive oil in a medium sized pan or skillet. Add root vegetables and mix so that the olive oil evenly covers them. Season with thyme, salt, and pepper. Cover, and allow the root vegetables to be cooked by the sun for 30 minutes until softened, stirring occasionally. Serve while still hot and enjoy mindfully!
