Ingredients:

3 leeks, white and light green parts only, halved lengthwise, sliced crosswise 1/4-inch thick

1 sweet onion, peeled and finely chopped

1 tbsp olive oil

4 eggs

2 teaspoons fresh thyme leaves

1 1/2 cups freshly grated gruyere cheese

½ cup milk

1 tbsp fresh chives, finely chopped

Salt and pepper to taste

 

Directions:

Heat olive oil in a medium-sized pan or skillet on SolSource by aligning it with the sun. Add leeks, onion and thyme. Stir well and cook for 10 minutes until leeks begin to brown. In a medium-sized mixing bowl, whisk together eggs, milk, 1 cup of cheese, and salt/pepper. Add the slightly browned leeks and onion to the mixing bowl as well and mix well. Pour the entire mixture back into the pan/skillet, sprinkling the remaining cheese and fresh chives evenly across the top. Cover and allow to cook all the way through (15 minutes). Remove from heat and allow to cool for 5 minutes. Divide into slices and serve to guests at your next solar brunch or picnic!
